This is the handwriting of Atushi Yohei, who is generally attributed as introducing sushi into the United States. Atsushi worked as an itamae at the Kawafuku Restaurant in Los Angeles’ Little Tokyo. Against the owner’s wishes, Atsushi introduced a few sushi items on the menu in the late ’60’s. Sushi soon became the rage among Hollywood performers and (for better or worse) the California roll was born. Unfortunately, one of Atsushi’s apprentices made an incorrect cut while preparing fugo and Atsushi honorably resigned his position and began work as a furniture salesman.
